By far, my favourite cookie is the twice-baked Italian cookie known as biscotti. For the longest time though, I felt too intimidated to even attempt baking them at home. While I air on the side of being a vegetarian, I’m no vegan. Not even close. I’m a milk and chocolate chip cookie girl, a wine and cheese lady. Nevertheless, I totally get the vegan cause and I have vegan friends. It’s hardly fair to them to receive socks come Christmas day while everyone else gets gourmet gifts made with much love. This year, one of the recipes that made it to this list is this vegan chocolate chip cookie recipe. I know, chocolate chip cookies are not exactly what comes to mind for Christmas but in case you missed the title, these are the best vegan chocolate chip cookies and such things must be shared. Yes, I have my vegan friends in mind but surely this recipe is not limited just to them. Finally, my peonies have bloomed! Years ago, we didn’t plant them in the most ideal location, and so, each year, ours are always late to shoot up soon after the last bit of snow has gone and likewise, late to bloom. This year, I was slightly more anxious waiting for them to bloom as I wanted to practice my photography skills (or lack of) with them. They are far too lovely to pass up such an opportunity. Since the only appropriate food I had conveniently available were these cardamom cookies, there is no uncertainty about which recipe this post will feature. Don’t get me wrong though, these are not just any ordinary cookies; they are made with whole wheat flour, contain no eggs and are flavoured with cardamom.
