Although there are still many more warm weeks ahead, the slightest bit of heed will reveal that all of nature has already begun conspiring to bid farewell to summer. What better way to celebrate than with blueberry ice cream?

Blueberry and Lemon Mascarpone Ice Cream 

(fills a 5×9 inches baking pan)

  • approximately 200 g blueberries
  • 120 g raw sugar
  • 400 g mascarpone cheese
  • 250 g heavy cream
  • 3 tbsp lemon juice
  • zest of one lemon (approximately 1 tsp), fine
  1. In a large bowl, combine cream, blueberries, sugar, cheese, lemon juice and zest and blend using an immersion blender until smooth.
  2. Pour the mixture into the cylinder of an ice cream maker and churn as per the manufacturer’s instructions. (I churn for 25 minutes.)
  3. Once the churning is complete, store in a freezer-safe container with an airtight lid.

  2. blueberries always signal the beginning of the end of summer for me too. i think that association comes from the time i spent in alaska, where the berries ripened late summer and the bears would gorge themselves before hibernation. this ice cream looks like something i could gorge myself on before a northern winter!

    1. I imagine these blueberries liken those of the wild blueberries on Québec, they are so sweet and bursting with flavour! I hope you get a chance to make the recipe.

  3. Looks super delicious ! It is so nice to make ice cream using fresh fruits at home, as store-bought ice cream is usually added with synthetic flavour & colour.
