Every time I make this soup, I always feel that it came to be from a misunderstanding,  that it should really be made with sunchokes, the root vegetable (otherwise known as Jerusalem artichokes, which aren’t artichokes or from Jerusalem, for that matter), instead of with globe artichokes.

Artichoke & Apple Soup

(serves 4-6)

  • 50 g butter
  • 130 g onion, diced
  • 2 cloves garlic, minced
  • 150 g Granny Smith apple, peeled, cored, and diced
  • 125 g celery, sliced
  • 5 cooked artichoke hearts*, about 250 g
  • 3 cups of vegetable or chicken stock
  • 1 tsp salt, more to taste
  • ground black pepper for serving, to taste
  • fresh parsley and cream for serving (optional)
  1. In a large saucepan, melt butter.
  2. Add onion and cook to soften.
  3. Add garlic and cook one more minute.
  4. Add apples, celery, artichoke hearts, stock and salt.
  5. Bring to a boil and then allow to simmer for 20 minutes.
  6. Remove from heat, let cool slightly, then using an immersion blender, puree the soup.

* You can cook the hearts by steaming using the instructions here or use canned artichokes. Note, the flavour of the soup will vary depending on which you use.

  1. Annika, this is a very interesting recipe. I often add apples to my savoury dishes, but I never added it to the soup. Artichoke soup is the dish we adore and it’s so delicious, I cook it almost once a week during its season. I will definitely try your recipe!

  2. I don’t think I’ve ever had a soup with apples in it. I do like artichokes but in this case I think I would go along with your thoughts on this soup. 🙂

    1. I totally hear you.. it sounded strange to me too. But my husband’s German grandmother who gave us this recipe did manage to get me to like apple sauce with savoury dishes… that sounded strange to me too at first.

  3. I’ve never had artichokes before, but they seem like an odd pairing with apples! And yet the soup looks like it’ll be surprisingly good 🙂

    1. Yes, it is an odd pairing and for a soup… in any case, it does make for a nice change from all the root vegetables we’ve been having lately.

    1. Haha… I never thought of it that way, yes, what a strange name. I’d say, try artichokes on their own first (steamed with a bit of salt and lemon) and see how you like them before venturing into this soup!

      1. Yes, always by a window with a strong natural light. In this case, I put two pieces of old barn wood on the dining table.
