Today’s recipe is a not-so-typical smoothie recipe. All you need for this recipe are about half of a lime, some milk and any type of sweetener. How does this become a smoothie?
Magic.
OK, not really magic, it’s called curdling. And it makes a creamy, thick, and delicious lime smoothie. This is the same process that turns milk into yogurt except since the milk is cold in this case, it doesn’t curdle as fast and you get a smoothie instead of yogurt. What’s really great about this smoothie is that we use the whole lime, including its peel which is packed with health benefits that we normally just throw away.
I’ll warn you though, lime peel, in particular, the inner whitish part of it, is quite bitter. That’s why, even for recipes that use lime peel, we normally just zest the fruit and use the outer green layer. If you are not particularly fond of the bitter taste, I suggest you start off by using less lime (though less lime also means less thick and creamy but you can compensate by subbing some yogurt for milk) and over time, increase the amount. You can also compensate for the bitter taste by adding more sweetener. In general though, bitter foods are really, really good for you so if you can adjust your taste buds to be friends with bitterness, your body will thank you in the long run.
Lime Smoothie
(serves 2)
- 30-60 g or 1/4-1/2 organic* lime, well washed
- 2 tbsp maple syrup or honey, or more to taste
- 1 1/2 – 2 cups whole milk
- Cut the lime into small pieces (peel included).
- Place in blender, along with maple syrup(or honey) and milk and blend well until the lime peel is reduced to tiny particles. (Having a powerful blender certainly helps here. I only have an immersion blender though and it does do the trick if I blend for a good 4-5 minutes. If you are using an immersion blender, be sure to blend in a large container or bowl as the milk will froth quite a bit.)
*Since we are using the peel, it is best to opt for organic here.
